In March we got the opportunity to check out LowCal! LowCal Cheatery bar is located in the heart of Canggu, Batubolong. With a focus on using locally sourced ingredients and creating dishes that are both nutritious and flavourful, LowCal is a go-to spot for health conscious foodies.
In addition to its tasty food and drinks, LowCal has a cozy and inviting atmosphere, with modern decor and plenty of natural light. Whether you are grabbing a quick lunch or enjoying an evening with friends, this restaurant is a great choice to satisfy your cravings without sacrificing your health.
During our visit to LowCal, we were able to chat with Chef Kristin, and she was happy to show us the preparation of two different meals. First, let’s start with the Crispy Pork Belly served with broccoli, turmeric sauce and a side salad.
Crispy Pork Belly
First Chef Kristin prepares the pork belly with herbs and spices, it is then placed into the oven to cook and form a delightful crispy top.
Ordinarily this dish is served with fennel but today we swapped it with broccoli. The locally sourced broccoli is prepared and toasted on the open grill for just a few minutes.
The delicate plating begins. Chef Kristin paints the plate with turmeric sauce, the pork belly and broccoli are then placed on the open side of the plate. Once the placement of the main components is complete Chef Kristin uses tweezers to precisely place the red-veined sorrel, pea shoots and edible flower petals across the plate.
Seared Mahi Mahi with Pomodoro sauce & mashed pumpkin
First, the mahi mahi is seasoned and seared in a hot pan.
Secondly, the side salad is prepared with a dressing of your choice. While the mahi mahi is finishing, Chef Kristin prepares the mashed pumpkin and Pomodoro sauce.
Thirdly, the plating begins. The Pomodoro sauce is the first component of this meal, with the mahi mahi placed on top of it.
The mashed pumpkin is then placed on top of the fish with a slice of lemon. The final touches include adding red veined sorrel, pea shoots, and a fresh edible dianthus flower.
