How to use Microgreens?

Despite being quite popular, Microgreens are still a bit of a novelty to most of us. If you are unsure what to do or how to use your Microgreens, then you have landed in the right place. We will show you two of our favourite recipes to use microgreens.

Know your Microgreens

It is best practice to eat your microgreens raw so that they are crisp and tender. The nutrient value of microgreens is reduced after being cooked. If you are not going to use your microgreens anytime soon you can store them in the freezer. Freezing will store in the nutrient content of the greens but it will destroy the crisp texture making them quite soggy after defrosting. For this reason, frozen microgreens are great for smoothies and smoothies alone.

Make a Salad

Salads are simple and super customizable, that’s why they are easy and always tailored to your taste. Here is a 5 minute vinaigrette recipe to give your microgreen salad a punch.

Ingredients:

  • Olive oil – 1tbsp
  • Sherry vinegar – 1tbsp
  • Dijon mustard – 1tbsp
  • Salt and pepper – pinch

Combine the oil, vinegar, mustard, salt and pepper in a glass jar, now shake it up for at least a full minute. Prepare your microgreen base salad, you can use our classic zesty mix. We love to include lots of micro radish for a spicy kick. Add a couple of your favourite nibbles such as cucumber, carrot and feta cheese. Now drizzle the dressing on top, sit back and enjoy.

Make a Smoothie

Maybe your not super keen on the raw flavour of veggies but still want to get that incredible nutrient boost to your daily diet. If that’s you, the Sweet Pea Smoothie is the recipe for you. It is the Pea Shoot Microgreens that give this smoothie such a brilliant nutrient boost. You are going to need a high powered blender for this recipe.

Ingredients:

  • Avocado – ½
  • Micro Pea Shoots – 25g
  • Coconut water – 1cup
  • Pineapple (frozen or fresh) – 1cup
  • Orange juice – ½ cup
  • Micro broccoli – 10g
  • Fresh Mint – 5 leaves
  • Agave nectar (or any other natural sweetener) – 1tsp
  • Ice – ¼ cup

Peel and cut all of the fruit, add everything to the blender and mix until smooth. Sit back and enjoy the Bali sunset with your smoothie in hand.
