What are Baby Greens?

Every plant has 4 main stages of growth:

  • Sprout,
  • Microgreen,
  • Baby Green,
  • and last but not least, Mature Plant.

Baby greens are young, tender leaves that are harvested before the plant reaches full maturity. They are smaller in size and more delicate in flavour compared to mature greens. Some delicious examples of Baby Greens include Arugula, Kale, Lettuce and Spinach.

One of the reasons why Baby Greens are so popular is because of their versatility. Baby Greens can be eaten raw in salads or wraps, or they can be lightly sauteed as a flavourful addition to pasta dishes, soups and stir-frys. Baby Greens also make a strong base for a healthy and refreshing smoothie.
